The Fresh Strawberry Cake has been a staple of Ambrosia Bakery for 23 years. It began as an attempt to create a simple, refreshing summer signature and has since become one of the most quintessential dishes of any kind in the Red Stick. If you go to an Easter picnic, summertime birthday party or Fourth of July cookout in Baton Rouge, chances are somebody brought one of these pretty ladies.
Peak sales times for the Fresh Strawberry Cake are Easter and Mother’s Day, but the demand for them is so high and so consistent that Ambrosia now employs a full-time team whose sole job is to bake these cakes. They go through 150 to 200 flats of strawberries per week, according to owner Felix Sherman Jr., whose mother concocted the first recipe.
