Serves 6.
For basil-infused simple syrup:
1 cup sugar
1 cup water
1 cup fresh basil leaves
1. In a small pot, combine the sugar and water.
2. Place over medium heat and heat until the sugar has completely dissolved.
3. Turn off the heat and add the basil leaves.
4. Steep the basil in the simple syrup for 35 to 45 minutes.
5. Strain the syrup into an airtight container and chill in the refrigerator for at least an hour. This may be made several days in advance and will keep in the refrigerator for up to two weeks.
