Less than two years since opening its first location in the Acadian-Perkins Plaza shopping center, The Salad Shop has announced plans to open a second Baton Rouge location.

Owner Bradley Sanchez says the second location will open sometime this fall in the Coursey Place Shopping Center at 11445 Coursey Blvd. An exact opening date has not been set.

“The Coursey location checks a lot of our boxes for expansion in Baton Rouge, and we are excited for the growth,” Sanchez says in a news release issued Tuesday morning.

Sanchez anticipates The Salad Shop will continue expanding in 2016. He says he’s eyeing multiple restaurant openings both in the Baton Rouge market and elsewhere.

“It’s taken us a little more than a year to open our second location because we really wanted to nail down the concept, process and quality,” he says. “I now feel that we’re in a great place for accelerated growth.”

The Salad Shop is a fast-casual concept that allows customers to choose ingredients and customize salads or wraps. The menu includes eight signature salads. Plans for an expanded menu and catering menu are also set to be released in the coming months, Sanchez says.
